Yes, plain potato chips are low histamine as long as they’re made with a low histamine oil. Unfortunately, even potato chips made with low histamine oils can still cause a histamine reaction if the oil has gone rancid and increased inflammation, which happens much more quickly once the oil has been heated (as with deep frying a chip). The solution to this is to make your own potato chips at home in an air fryer, using little oil and little salt. Once you’ve sorted out which spices you can tolerate, you can even make your own seasoning mix for potato chips, and use the same technique to make sweet potato chips.
