Sweet potatoes are low histamine. However they’re also quite high in oxalates, a plant toxin to which many people dealing with histamine intolerance are also sensitive. But as long as you don’t have an oxalate sensitivity, sweet potatoes are a safe and nutritious addition to a low histamine diet. They’re a rich source of potassium, vitamin B6, and dietary fiber, and they’re perfect to add to a hash, bake in the oven, or drop into the air fryer.
