Yes, corn is low histamine. It’s one of the many low histamine vegetables that abound each summer, especially in the United States and Mexico, where it’s native. The corn produced for human consumption is high in vitamin B1, folate, and dietary fiber, but unfortunately, it’s often also genetically modified. Organic corn cannot by law be GMO, so that’s a safe option if you’re looking to avoid GMOs. Popcorn is another low histamine corn product, and contains all the above nutrients in addition to high levels of vitamin A.
