Coffee may be low histamine. In fact, coffee is generally low in histamine, but it also contains caffeine, which is known to block DAO activity. This means that if you’re deficient in DAO (diamine oxidase), the enzyme which clears histamine from your system, then you should avoid coffee and other caffeinated drinks, like tea. If you’re unwilling to give up your morning joe, however, just make sure that you drink low-acid, mold-free organic coffee. Consider switching to decaf coffee to minimize its impact upon your system, at least while you’re eating low histamine. Buy beans from a roaster you trust and brew your coffee at home. Using a French press or a moka pot are easy ways of brewing up a quick cuppa and still leaving space for cream or honey.
