Yes, kale is low histamine. Much like the dozen or so other cruciferous vegetables, it’s very versatile and rich in vitamins K & C, folate, and selenium. Kale comes in several different types, and all of them are equally good for you (though you should avoid curly kale especially if you have oxalate issues). Some great low histamine kale recipes include oven-baked garlic chips and veggie skillets.
