Yes, lentils are low histamine and very good for you. However problems can originate with lentils’ high levels of oxalates and lectins, both of which are plant toxins to which many people can develop a sensitivity. Additionally they have relatively high levels of other biogenic amines, which can use up DAO that is needed to clear histamine. If you’re still worried about amine level, it’s generally said that red lentils are lowest in histamine. Lentils of all types are popular to use alongside other legumes and beans (as picture below), especially in South Asian and South American recipes.
